Feisty Peppers

(Vegetarian option: substitute mince with can of any kind of bean or lentil)


Last night's dinner was this lovely pepper dish I found on a very mouthwatering and beautiful blog. I only tweaked the ingredients a little bit and the original recipe -along with many more!- can be found at:

Preparation Time 
25 mins (excl. 20 min bake, nonbake alternative recipe below)

Ingredients
4 medium sized peppers (any color)
1 medium sized onion, diced
1 carrot, diced
3 green chili (mine were not very spicy, vary as per your taste)
= onion, carrot, chili should equal approx 2 cups
3 garlic gloves through press or finely chopped
small bunch fresh coriander, chopped OR 1 tbsp dried coriander
100 gm canned OR fresh corn
200 gm cream cheese OR 200 gm creme fraiche
250 gm minced meat (any kind, I used mixed beef & pork)
100 gm cheese as topping
Salt
Pepper
Cinnamon
Cumin
Piri Piri OR chili

Toolkit
Cutting board, knife, frying pan, baking dish, garlic press (optional)

Preparation
1. Turn on oven to 200C.
2. Cut peppers in halves, take out pips, place in oiled baking dish, put in oven.
3. Fry minced meat with garlic and cinnamon.
4. Once mince is crumbly, add carrots, onions, coriander & stir well. 
5. Add corn & the rest of the spices and let it all fry for a few mins. 



6. Take peppers out of the oven.
7. Add cream cheese OR creme fraiche to mix and stir well through.
8. Spoon mix into pepper halves.
9. Cover halves with cheese. 



10. Bake for 15-20 mins on 180C.


No Oven? Toolkit No 2
Cutting board, knife, frying pan, frying pan lid OR aluminium foil, garlic press (optional)

No Oven Preparation
1. Cut peppers in halves, take out pips, place in oiled frying pan and cover with lid. (if you don't have a lid, you can use aluminum foil)
2. Fry peppers on the very lowest heat possible. Turn once in a while. Watch them closely, they need to retain their form. 
3. Fry minced meat with garlic and cinnamon.
4. Once mince is crumbly, add carrots, onions, coriander & stir well. 
5. Add corn & the rest of the spices and let it all fry for a few mins. 
6. Don't forget your peppers! Take them off the heat before they get too mushy. 
7. Add cream cheese OR creme fraiche to mix and stir well through.
8. Spoon mix into pepper halves & cover halves with a thin layer of cheese cheese. 
9. Turn the heat off and let the peppers sit till the cheese is a little melted.
