Asian Cole Slaw

Yep, I am on a Cole Slaw run- love the stuff. Cheap, easy to make, a surefire crowd-pleaser and somehow entirely underestimated. This version dips into all the Asian condiments you might have sitting in your kitchen shelf...
 
Prep Time: 15 mins (or let sit over night)

Ingredients
1/2 Cabbage head
1 Carrot
2 Spring onions
5 Teasp. Sesame seeds
3 Tablesp. Soy sauce or Tamari
2 Tablesp. Sesame oil
3 Tablesp. Nihonshu (Japanese Sake)
2 Tablesp. Mirin
Juice of 1/2 Lemon
1 Teasp. dried Japanese fish bullion (OPTIONAL)

Add carbs for those who like it crunchy: handful of dried Chinese noodles, right before serving so they don't get soggy

SUMMER UPDATE: Shepherd's Pie with Squash (Spagetti Squash Rules!)

I enjoy Shepherd's Pie in all versions - may it be with more carbs (ie potatoes) or less (ie pumpkin), I also truly enjoyed last night's variation with spaghetti squash. The squash makes the dish a little lighter and therefore even more satisfying on a hot summer night.


Ingredients
1 spaghetti squash
2-5 tablespoons butter
1/2 cup feta cheese

500gm minced meat (pref beef, or mix)
2 tablespoons tomato puree
1 carrot
1 medium sized onion
1 parsnip (can be substituted with one more carrot or any other hard boiling vegetable)
1/2 cup red wine
2-3 tablespoons Worcestershire sauce
Thyme 
half Bouillon cube
salt & pepper
dash of oil

The Amazing Sausage Skillet

Made this as "Emergency Food": It's the weekend, super cozy inside and nasty as hell outside. Let's see what we have in the fridge/ cupboard to whip up a comforting dinner. I will have to admit it's a "Cheat Dinner" since it contains per-prepared ingredients...

Pumpkin Shephard's Pie

Winter Comfort Food Galore: Shepard's pie is a wonderful dish to warm the belly & heart when its minus 20 (or basically any temperature below 10C). This edition is made with a pumpkin-cover instead of potato, lowering the carb contents significantly.
