The Amazing Sausage Skillet

Made this as "Emergency Food": It's the weekend, super cozy inside and nasty as hell outside. Let's see what we have in the fridge/ cupboard to whip up a comforting dinner. I will have to admit it's a "Cheat Dinner" since it contains per-prepared ingredients...

Prep Time: 30 mins





Ingredients

6 sausages (the raw kind, you can use any flavor)
1 can chickpeas
1 glass pickled red peppers
1 cup chopped parsley (I usually buy a big bunch, chop it up and freeze anything i won't use. Still feels like it's got more flavor than the dried version)
pita bread (I usually keep some in the freezer, too)
chilli for extra kick - as you like
dash of oil
salt & pepper to taste

Preparation

1. Cut sausages into easily edible sized pieces
2. Fry them in hot, well oiled frying pan
3. Once meat is cooked through, add drained can of chick peas.
4. Cut peppers into pieces a little smaller than sausage, add to frying pan.
5. Stir and fry for several minutes.
6. For a little extra kick, add chilli flakes.
7. When all well mixed and cooked together, add parsley.
8. Preheat oven to 350, bake pita until crispy. 
9. Add salt and pepper to skillet (easy on the salt, the saussages will have a fair amount of salt already)
10. Serve with pita on the side. Or without if you are carb-shy.
