Spinach Salmon Quiche - sans pastry


Ingredients
450 gm frozen spinach
1 onion (small cubes)
2 garlic gloves (thin slices or through garlic press)
2 eggs
1 cup creme fraiche/ creme fraiche light
150gm cheese (grated, any kind)
butter
125 gm smoked salmon
No salt (there is enough in the salmon)
Pepper
Nutmeg
Paprika







Toolkit
Knive, cutting board, frying pan,mixing bowl, casserole (glas or other)

Instructions1. Preheat oven to 200C.
2. Sear onions & garlic with butter till golden - don't overcook or burn.
3. Add frozen spinach to pan on low heat. Let spinch do its melting thing, stir occasionally
4. In separate bowl, mix eggs, creme fraiche, cheese, salt, pepper, pepper, nutmeg, paprika.
5. Coat casserole in butter or other oil.
6. Mix pan & dish contents, add salmon and quickly pour into oven dish (you don't want the egg to settle too soon).
7. Place on lower oven shelf, bake for 30-40 min or until golden on top.
